The Meatballs
300 grams ground beef
300 grams ground pork
2 teaspoon minced garlic
1 teaspoon dried Italian seasoning
1 teaspoon dried parsley
1 egg
100 grams grated parmesan cheese
50 grams Italian breadcrumbs
1 teaspoon salt
1/4 teaspoon pepper
cooking spray
Method
Combine all of the ingredients for the meat balls in a large bowl, using your hands or a large wooden spoon.
Shape the mixture into small balls and place them on a baking tray to broil or you can grill them on a pan.
Broil or grills until meatballs are lightly browned.
The Soup
2 teaspoons olive oil
100 grams onion diced
2 stalks diced celery
2 diced carrots
2 can of 400 grams crush tomatoes
1 can of 400 grams tomato sauce
2 litres of beef broth
1 teaspoon dried Italian seasoning
salt and pepper to taste
150 grams short pasta
2 tablespoons fresh parsley chopped
parmesan cheese for serving
Method
Heat olive oil in a large pot over medium heat.
Add the onion and the Italian seasoning, cook until the onions are light brown
Add celery and carrots and cook for about 5 mins
Add the cans of crushed tomatoes and tomato sauce, stir well
Add beef broth, salt and pepper.
Bring to a simmer.
Add the pasta to the soup for 5 mins and then add the meatballs.
